Recipe: Coconut Oil, Chocolate, and Almonds – Oh My!

I recently wrote a blog extolling the health (and healthy skin) benefits of coconut oil. I love it! Remember in the movie My Big Fat Greek Wedding, when the father sprayed Windex on everything? That’s kinda how I feel about coconut oil. Here’s a great article on clever uses for coconut oil. Seriously. Everything! Like Windex, but healthy.

Anywho, I figured I oughtta share with you one of my favorite coconut oil snacks. And yes, there’s chocolate involved.

This is a single-serving snack. It’s satisfying and sticks to your ribs for several hours. And it’s healthy!

In a tiny, cute little bowl (or an ugly one, no matter), stir together the following ingredients until well-blended:

1 T coconut oil

1 T cocoa powder

1 T ground flax seed (for healthy hormones and to add fiber)

1 T organic real maple syrup

2 T almonds

Now eat it. Full disclosure: I feel sad when it’s over.

It’s basically an Almond Joy. And oh, the joy it brings me.
